    Glad to hear you had a great morning skiing at Lake Louise! Wish I would have been there too!

    To further your interesting video, most people don’t know that sulfites are naturally occurring in wine as a by-product of the yeast metabolism during fermentation. So in fact, organic or not, all wines contain sulfites! It is only if there is less than 10 ppm (parts per million) that the label does not have to bear the 2 words: “Contains Sulfites”.

    I have red that the maximum amount of sulfite that wine is allowed to contain is 160 ppm for red wine, 210 ppm for white, and 400 ppm for sweet wines. Knowing this, my question is: Why is it so mainstream to hear people say they prefer drinking white wine because they find that red wine causes them more headaches? Are all these people just very lucky in picking white wines with less sulfite contents?? Would there be other ingredients like the histamine you mentioned or simply other factors involved in this common headache reaction so many blame sulfite in red wine for?
